Chocolate Chip Oatmeal Cookies

These yummy and nutritious cookies hit the spot today on this chilly day in Belgium. If you are looking for the perfect Sunday treat but don't want to totally break your healthy eating you have found the perfect recipe. :)

Hope you enjoy these as much as we did!

Ingredients:

1 Cup Oat Flour
3/4 Cup Rolled Oats
1/4 Tsp Salt
1/8 Tsp Baking Soda
1/2 Tsp Baking Powder
3 Tbsp Shredded Coconut
1/3 Cup Dark Chocolate Chips
1/4 Cup Coconut Oil
1/4 Cup Pure Maple Syrup
Extra flour if needed

Directions:

Place a sheet of parchment paper on a cookie sheet and set aside.

In a large mixing bowl, combine all dry ingredients and stir very well.

In a separate bowl, whisk together all liquid ingredients.

Pour wet into dry and stir to form a dough.

Roll out chocolate chip oatmeal cookie dough balls by smushing the dough together with your fingers. The dough will be sticky.

If the dough is too sticky add a little bit more flour to make it more manageable to work with.

Place on the pan, smush down just a little bit. Place the dough in the freezer for about an hour.

Preheat oven to 350 degrees bake about ten minutes.

The oatmeal chocolate chip cookies should still look a little undercooked when you remove them from the oven, but they’ll firm up as they cool.

Set the tray aside for 10 minutes before removing the cookies.

Enjoy!

Finishing Up The Stranger & Starting The Snow Child

I thought The Stranger was a great book. I wanted to know so badly what was going to happen next that I read it in like two days. :)

I liked how the book constantly kept me on the edge of my seat and made my wonder when the characters were going to realize what was going on. What did you think about The Stranger?

Here are a couple questions about The Stranger. Let me know what you thought about the book. :)

1. What was Adam’s reaction to the Stranger and his story? Did he believe it at first?

2. We are only told about Adam’s feelings throughout the book. Why did the author not let us in on Corrine’s thoughts or feelings at all?

3. When the men from the soccer team came to Adam and told him Corrine had taken the money from the soccer fund what was his reaction?

4. The author, Harlan Coben, was asked in an interview why he wrote about ordinary people whose live change in a few dramatic moments. What do you think?

Our next book is The Snow Child by Eowyn Ivey. We will be starting it Sunday September 18th and ending it on Sunday October 9th.

Synopsis From Goodreads: Alaska, 1920: a brutal place to homestead and especially tough for recent arrivals Jack and Mabel. Childless, they are drifting apart--he breaking under the weight of the work of the farm, she crumbling from loneliness and despair. In a moment of levity during the season's first snowfall, they build a child out of snow. The next morning, the snow child is gone--but they glimpse a young, blonde-haired girl running through the trees. This little girl, who calls herself Faina, seems to be a child of the woods. She hunts with a red fox at her side, skims lightly across the snow, and somehow survives alone in the Alaskan wilderness. As Jack and Mabel struggle to understand this child who could have stepped from the pages of a fairy tale, they come to love her as their own daughter. But in this beautiful, violent place things are rarely as they appear, and what they eventually learn about Faina will transform all of them.

Finishing Up Reconstructing Amelia & Starting The Stranger

I loved Reconstructing Amelia. It kept me guessing and interested the entire book. I also loved that the end totally shocked me. What did you think about Reconstructing Amelia?

Here are a couple questions about Reconstructing Amelia. Let me know what you thought about the book!

1. Might Amelia's situation have been different if she'd had a larger family around her? What if that family had been larger, but more filled with conflict?

2. Is Kate a good mother? She believes she knows her daughter well, but does she? What does she discover about Amelia that surprises her? What does she discover that confirms her deepest beliefs about Amelia and their relationship?

3. What kind of a support network does Kate have to rely on? Does she bear any blame for the events that occur? Is there any way she could have prevented the tragedy? What about Grace Hall—how much, if any, responsibility does the school bear for Amelia's death? Who can you turn to for help in handling a problem involving your child?

4. Why is being popular so important in adolescence? Has the Internet and social networking added to the pressures teenagers must cope with?
Our next book is The Stranger by Harlan Coben. We will be starting it Sunday September 4th and ending on Sunday Septemeber 18th.

Synopsis From Goodreads: The Stranger appears out of nowhere, perhaps in a bar, or a parking lot, or at the grocery store. His identity is unknown. His motives are unclear. His information is undeniable. Then he whispers a few words in your ear and disappears, leaving you picking up the pieces of your shattered world.

Adam Price has a lot to lose: a comfortable marriage to a beautiful woman, two wonderful sons, and all the trappings of the American Dream: a big house, a good job, a seemingly perfect life.

Then he runs into the Stranger. When he learns a devastating secret about his wife, Corinne, he confronts her, and the mirage of perfection disappears as if it never existed at all. Soon Adam finds himself tangled in something far darker than even Corinne’s deception, and realizes that if he doesn’t make exactly the right moves, the conspiracy he’s stumbled into will not only ruin lives—it will end them.
