Ingredients:
Lime Salmon
2 Skinless Salmon Fillets
3 Tbsp Olive Oil
3 Tbsp Fresh Lime Juice
3 Cloves Garlic, Crushed
Salt and pepper, to taste
Coconut Rice
1 1/2 Cups Coconut Water
1 Cups Brown Rice
Avocado-Mango Salsa
1 Large Mango, Peeled and Diced
1 Chopped Red Bell Pepper
1/4 Cup Chopped Fresh Cilantro
1/3 Cup Chopped Red Onion
1 Large Avocado, Peeled and Diced
1 Tbsp Fresh Lime Juice
1 Tbsp Olive Oil
1 Tbsp Coconut Water
Salt and pepper, to taste
Directions:
For Salmon:
Mix the olive oil, lime zest, lime juice, garlic and season with salt and pepper to taste.
Brush grill grates with oil or place sliced limes on the grill to place salmon on. Sliced limes are a great way to prevent the salmon from sticking and also gives the salmon great flavor.
For Coconut Rice:
While the salmon is marinating prepare the coconut rice.
For Avocado-Mango Salsa:
I like to prepare the salsa while the salmon is grilling.

Directions:
For Salmon:
Mix the olive oil, lime zest, lime juice, garlic and season with salt and pepper to taste.
Place salmon in baking dish, cover and allow to marinate in refrigerator 30 minutes, then flip salmon to opposite side and allow to marinate 30 minutes longer.
Preheat a grill over medium-high heat.
Brush grill grates with oil or place sliced limes on the grill to place salmon on. Sliced limes are a great way to prevent the salmon from sticking and also gives the salmon great flavor.
Place salmon on grill and grill about 5 minutes per side or until just cooked through.
For Coconut Rice:
While the salmon is marinating prepare the coconut rice.
Bring the coconut water to a full boil.
Add rice and cover.
Turn heat down to a simmer and simmer until liquid has been absorbed. About 30 minutes.
For Avocado-Mango Salsa:
I like to prepare the salsa while the salmon is grilling.
Toss together mango, bell pepper, cilantro, red onion, avocado, lime juice, olive oil and coconut water.
Season with salt and pepper to taste.
To serve I like to put the coconut rice on top of my salmon and then top the rice with salsa.
